I have worked with the Minneapolis Health Department for 20 years. I worked as an intern with the City of Minneapolis before graduating Summa Cum Laude from Concordia College in St. Paul in 1995. I earned a Bachelor Degree with an Environmental Science Major and a Math Minor. Once I graduated, I was hired on full time with the City in the Food Lodging and Pool Division. I conduct inspections of various types of food establishments as well as pools, body art establishments, and hotels. A few years ago I was promoted to Senior Health Inspector. I still conduct inspections but also work as a Team Lead and trainer for other staff. My passions outside of work are traveling and my two cats.

Bob Becker
City of Minneapolis Health Department -

Bob Becker has been employed with the City of Minneapolis Health Department for 18 years. Bob interned with the Minneapolis Health Department in the summer of 1997. After graduating from the University of Wisconsin Eau Claire with a Bachelor of Science degree in Environmental Public Health in 1997, Bob was hired on full time in 1998 with the City of Minneapolis Lead Hazard Reduction Program as a Lead Risk Assessor. During the first 5 years of employment, Bob conducted lead risk assessments to identify lead based paint hazards. For the past 13 years, Bob has been working in the Food, Lodging & Pools Program for the Health Department where he is responsible for conducting inspections of licensed food, lodging and pool establishments. Within the past couple of years, Bob was promoted to a Senior Health Inspector within the program. He helps train new staff and provides technical interpretation on the various codes that we enforce. Bob has a beautiful wife and two kids that are heavily involved in baseball, softball, basketball and soccer. In his free time he loves to spend time with family, friends and hunt for deer.

Rachel Keith brings with her over 17 years of experience in the foodservice industry. Having spent time as a manufacturer's rep early in her career, she then transitioned to Kairak, an ITW company for the next eleven years in multiple functions ranging from Customer Service Manager, Sales Manager, Business Unit Manager and Business Development Manager. In early 2015, Rachel joined the Victory Refrigeration Sales Team. Victory is an Ali Group company that is headquartered in Winston Salem, NC. Rachel is responsible for managing Victory's business in multiple regions of the U.S. as well as the ACFSA and SNA market segments.

National Sales Director for Champion Industries Jay Bravinder has been heavily entrenched in the warewashing segment of the commercial foodservice industry for 22 years. In 1994, Bravinder was hired as Sales Manager for Hobart Corporation and worked within the company for 13 years. In 2008, Bravinder became Equipment Sales Manager for Strategic Equipment and Supply Corporation and was responsible for managing project teams and national accounts within the dealer community. In 2011, Bravinder was hired by Champion as the Director of Sales and was promoted in 2014 as National Director of Sales. Bravinder oversees national and international sales efforts for both Champion and Bi-Line and has successfully grown his territory and influenced the strategic vision of the company.

Sarah Leach

Sarah Leach is trained as a scientist, educator and coach, and has diverse work experience, including conducting field research at the Metropolitan Mosquito Control District, teaching middle and high school science classes, coaching high school volleyball, and inspecting food and lodging establishments and public pools in Carver and Scott Counties. Since 2012 she has looked forward to coming to work each day as a Planner Principal in the Partnership and Workforce Development Unit (MDH). She collaborates with a talented and gifted team as she coordinates the food manager certification program, plans and leads numerous training sessions for EH staff, and assists with Web and print material development. Sarah is a lifelong resident of St. Paul, and now lives in the Como Park neighborhood. She and her husband have four children and three cats

Peter J. Schubert is a Professor of Electrical and Computer Engineering at the Purdue School of Engineering & Technology at Indiana University-Purdue University Indianapolis. He is a licensed Professional Engineer, holder of 53 patents worldwide, and author of over 100 technical papers. Schubert is the director of the Richard G. Lugar Center for Renewable Energy, managing 43 faculty researchers. He has managed projects from NASA, DOE, DOD, USDA, and GSA, and is a senior member of SAE, IEEE, and AIAA.

Terry has been planning foodservice facilities since 1985, and has considerable experience developing functionally-oriented operations for a wide range of clients. She holds a Bachelor of Arts in Food and Nutrition from Concordia College and began her career with a dietetic internship at Massachusetts General Hospital. She then transitioned to foodservice management for Iowa State University, discovering an innate aptitude for creating floor plans and managing the flow of operations. From there, she joined the Minneapolis-based foodservice design & consulting firm Rippe Associates and has spent the past 31 years planning commercial kitchens and dining facilities for clients ranging from universities and schools to corporations, correctional facilities, hospitals and churches. For Terry, job success is defined by taking care of her clients - doing the right thing and ensuring things don't fall apart in the details. Terry is also a professional member of FCSI, the Foodservice Consultants Society International.

Terry and her husband are infamous for being in the midst of either starting or finishing a construction project. She has a long held interest in residential and industrial energy trends, well before the green revolution became hip. Her research eventually led her to develop plans for their new energy-efficient home, equipped with geothermal heat and stone hearth pizza oven as the heart of the kitchen. They have two grown children, and two grandchildren, which they love to spoil.

Jo Miller, RDN, MPH received a B.S. in Nutrition Science and Minor's in Food Service Management from UC Davis then went on to complete her dietetic internship at Napa State Hospital. In 2010 she completed her master's in Public Health from UC Davis with an emphasis on Nutrition, Informatics and Journalism. Joey is currently a Disaster Nutrition Consultant with Meals for All. Her focus is, but not limited to, volume emergency nutrition preparedness, marketing and education. She is an invited speaker on the topic of emergency nutrition preparedness throughout the United States and works closely with healthcare facilities to evaluate current emergency nutrition plans and anticipate future preparedness needs. Jo lives with her family and 3 dogs in Sacramento, CA and can be found climbing mountain on the weekends.

Sheila Packwood has worked in the field of dietetics within her home state of Minnesota for 20 years, with experience ranging from food management to clinical nutrition to public health education. Currently she is the Food Program Director with the Minnesota Department of Corrections and has worked for the agency for 12 years in their central office located in St. Paul. Her position and duties there have grown over time, starting as a part-time advisor within the Health Services unit, moving on to fulltime dietitian and for this last year as a program director guiding a standardized Food & Nutritionsystem for the State's eleven prisons. She contributes her longevity in this challenging environment to the colleague network available within ACFSA that she was fortunate enough to discover early on in corrections career.


How to Efficiently & Cost Effectively Eliminate Food Waste

Description:This session will focus on the challenge of eliminating food waste generated at the facility. With rising expectations of diverting food waste from going to landfills, facilities are looking for efficient and cost effective options for meeting this objective (and in some states, mandate). The discussion will be on the use of an onsite digester system, located right in the kitchen, which converts food waste into greywater, which then flows down the floor drain. Also discussed will be the ability to capture and track food waste - providing valuable operational and sustainability insights. We will also highlight some of the new innovations related to closed loop water recirculation and waste-to-energy options. Finally, the solution discussed in this session has in fact already been implemented across the U.S. Federal Bureau of Prisons facilities. This is a proven, efficient and cost effective approach for eliminating food waste and it's available for organizations today.

  • The session will provide an industry overview specific to food waste, landfill diversion, and various solution approaches.
  • Of the various onsite diversion solutions, the focus for this session will be on the aerobic digester system, which converts food waste into greywater.
  • Beyond the capability of the digester system to eliminate all property food waste, this session will also highlight the ability to track food and monitor food waste reporting details via the web and mobile apps (anytime, anywhere, any device).
